Lately Trevor and I have been trying to cook more meals here at my apartment rather than spend our money eating out. It's healthier, and we save money, so it's a win-win. We've been trying to "recreate" dishes from our favorite restaurants at home. Last week we decided to try to make our favorite portabella mushroom sandwiches from Champs, and they were de-lish.
MUSHROOMS: We bought huge portabella mushroom caps and put them in a baking pan. We coated them with olive oil, salt, and pepper, and then put them in the oven under broil for 5 minutes, turned them over, then back in for 4.
Meanwhile, while the mushrooms were broiling, we minced a clove of garlic and mixed it with some low fat mayo in a dish.
When the mushrooms were done, we took them out and turned off the oven, then put our whole wheat kaiser rolls into the hot oven on a baking sheet to crisp them up a bit.
After the rolls were toasted, we put the mayo/garlic mixture on them, added lettuce, the broiled mushrooms, and the best part: sun dried tomatoes (the kind in a can, not a bag). It was amazing.
