Peach Glaze Pork Chops

Now that Trevor and I have real jobs, we can actually afford to buy groceries other than cheap pastas, sandwiches, and frozen foods. We have both been experimenting with new recipes and foods lately and so far everything we've made has been a hit! Tonight I decided to try this recipe from Michaela for peach glazed pork chops.

Here's the recipe, which seems complicated but it wasn't too bad!

Peach Glaze Pork Chops
Ingredients:
2 TBSP Olive Oil
Pork Chops (8-12oz each)

For the glaze-
1/3 C. Vodka
2 TBSP honey
1 C. Diced Peaches
2 TBSP Rosemary
4 TBSP Unsalted Butter

Directions:
1. Add oil to a large sauce pain. Season chops with salt and pepper. Put in a pan, cover, and heat over medium heat for about 7 minutes.
2. Flip chops, cover, and cook about 10 minutes more, or until chops are cooked the whole way through.
3. Remove the chops from the pan and cover with foil. Set aside.

The Glaze
4. Pour vodka into the same pan that the pork chops were just in. Scrape up browned bits from grilling the chops.
5. Stir in honey.
3. Boil mixture until syrupy (2-3 minutes).
4. Add peaches and rosemary. Simmer until peaches are soft.
5. Off the heat, swirl in butter a pat at a time until fully melted.
6. Serve over chops and enjoy!



I served the pork chops with a side of red potatoes that I cooked with olive oil and rosemary, and also a side salad with tomatoes.

The peaches, potatoes, and tomatoes were all fresh from my parents garden!

This was a perfect August dish considering the amount of fresh peaches that are here in PA. If you enjoy pork chops and potatoes, this is a fun, easy dish for you to try! Plus, Trev and I both loved it!
